This recipe is divine. There really are not too many adjectives to describe this dessert. I have kept this recipe a secret and all to myself (and my mom) for a year and a half and thought I'd share it with you. Believe me, when this goodness enters your mouth, YOU WILL THANK ME!<br />

<u>Makes one roll and serves 8-10 slices.</u>*Cake Ingredients<br />
4 eggs, separated - <i>reserve two egg yolks</i><br />
1 cup white sugar</div>

1/4 cup butter, softened</div>

3/4 cup gluten free flour **see below (or all-purpose flour)</div>

2 Tbsp instant espresso <i>or </i>instant coffee granules mixed with 1 Tbsp water</div>

<b>Directions:</b><br />
Preheat oven to 350 degrees. Spray a parchment lined 17x11 inch jelly roll pan with non-stick cooking spray. Set aside.<br />
Beat egg whites in a large bowl at high speed until stiff peaks form. Set aside.<br />
Combine 2 egg yolks, sugar, butter, and vanilla in a large bowl and beat until well mixed and creamy. Reduce speed to low and add all remaining cake ingredients and beat until well mixed. Gently fold in egg whites until thoroughly combined.<br />

Pour into your prepared pan and spread evenly, making sure all corners have even amounts of cake and the middle of the pan is even as well. Bake 15-20 minutes for gluten free flour and 10-15 minutes for wheat flour. It is done baking when the center slightly bounces back after touching it. Remove from oven and run a knife around the edges of the pan immediately. Let the cake cool 20 minutes in the pan.<br />
After cooling, invert the cake onto a smooth dish towel (do not use terry cloth) sprinkled generously with powdered sugar and cocoa powder (see photo).<br />

Carefully, remove the parchment paper off the cake and turn it over clean side down and roll the cake, parchment paper and towel together slowly. Cool completely, seem side down. Approximately 30 minutes.<br />
Dissolve instant espresso in water in a small bowl and set aside. Beat cream cheese and butter together until smooth. Add powdered sugar and finally the espresso and beat until completely combined.<br />

Preheat oven to 350 degrees after the batter has chilled in the refrigerator at least one hour.</div>

Mix the softened butter and sugar until creamed then add the vanilla and eggs - one at a time until nice and smooth. Sift together the flour, cocoa powder, baking soda, salt and then slowly incorporate that into the wet ingredients. Scrape the bowl and make sure everything is mixed well. Next add the chocolate chips. Refrigerate at least 1 hour then bake at 350 degrees on a parchment lined cookie sheet for 11 minutes. The cookies will continue to cook while they are cooling on the cookie sheet. Remove from the oven and let cool on the baking sheet for 3-5 minutes. Once cooled, move to a cooling rack and cool completely.</div>

Preheat oven to 400 degrees.<br />
Line a regular sized muffin tin with precooked bacon. If you are going to use raw bacon, precook it in a skillet or in the oven until it is almost all the way cooked. It needs to be pliable enough to put in the muffin tin.<br />
In a bowl, scramble the eggs and egg whites together with the salt and pepper. Add the remaining chopped ingredients and stir to combine.<br />
Using 1/4cup measurement or an ice cream scoop (which is my preferred method), pour one scoop of the egg mixture into each cup. You may have a little left over in the bowl so make sure you put all of that goodness into a cup that may not have gotten enough.</div>

Bake at 400 degrees for 25-30 minutes, or until the eggs have cooked entirely through. My cooking time is somewhere between 23-25 minutes so keep an eye on them.<br />
These will puff up in the oven and then will deflate just a little bit so don't be too disappointed when they come out. It's suppose to happen this way.</div>

When you refrigerate these and are ready to reheat, you can pop them into the microwave for a minute or back into a 400 degree oven for 10-15 minutes and they will be perfect.<br />
<br />
For freezing, place on a plastic-wrap lined cookie sheet and freeze for about an hour then transfer to a freezer safe container. When ready to reheat, place the amount you want to serve on a cookie sheet and preheat the oven to 400 degrees. By the time your oven reaches temperature, it should have been given enough time to thaw out a little. Bake 25-30 minutes to reheat.<br />

Making the gravy nice and dark cooks out the flour taste and gives it a rich deliciousness that you need to smother the chicken with. </div>

Hey you paleo and gluten free people.. I know corn starch isn't exactly paleo but substitute equal parts corn starch for the flour and you'll have an excellent gravy. You might try it with arrowroot flour but I've never had good luck with that for some reason. Corn starch is easier on my tummy.</div>

Well, here's a delicious paleo and/or primal meal all in one. It has the carbs, proteins and fats all in one pretty little package. Now, this recipe does include cheese so if you don't eat cheese, leave it out. Just add some salt and pepper and you're good to go!</div>

2 green bell peppers</div>

1/2 - 3/4 pounds ground meat. beef, chicken, turkey, sausage.. whatever you like</div>

3/4cup crushed tomatoes</div>

1/2cup onion, diced</div>

1/4cup bell pepper, diced (see notes below)</div>

Preheat oven to 375 degrees and preheat a skillet over medium heat.<br />
Slice off the tops of the bell peppers and reserve them for future use. Remove the seeds/ribs on the inside and discard. Using a knife, remove the stem from the tops of the bell peppers you just sliced and dice into bite sized pieces.</div>

In a medium skillet, add the ground meat, onions and bell peppers and cook thoroughly (about 8-10 minutes) and season with salt and pepper. Drain the excess fat and place back in the skillet or clean bowl. Add the crushed tomatoes and stir thoroughly. Scoop the mixture into the bell peppers and top with cheese. </div>

I guess making it was a challenge since I'm not the best at "folding" ingredients together, especially when egg whites are involved. Nonetheless, I went on towards reaching a goal and success! Preheat oven to 350 degrees F. Make sure your oven is ready to go or your cake will fall flat.<br />
Combine 1/2cup sugar with the flour and sift together 4 times. This really does make for a light and airy cake so I highly recommend doing this.<br />
Place the eggs whites, salt and cream of tartar in the bowl of an electric mixer and beat with the whisk attachment on high speed until stiff peaks form, approximately 1 minute. With the mixer on medium speed, add the remaining 1 1/2cups of sugar by sprinkling it over the egg whites. Whisk until thick and shiny then add the vanilla extract and whisk until thick, about another minute. Sift the flour mixture into the liquid mixture 1/4 at a time and fold into the batter with a rubber spatula. <br />
Pour the batter into an ungreased 10-inch tube pan, smooth the top and bake 35-40 minutes until it springs back to the touch. I baked mine 45-50 minutes so please watch your time carefully.<br />
Remove the cake from the oven and invert on a cooling rack until completely cool.</div>

I took the specified concoction and I was surprised that it worked. It warded off the cold and I only had a few aches the first day and I was more tired than usual on the second day and by the third day, I felt normal again. In the bowl of an electric mixter, combine 3/4cup water and the 4 gelatin packets.<br />
Over medium-high heat, combine 3/4cup remaining water, granulated sugar, light corn syrup and salt and bring to a boil until the mixture reaches 240 degrees F on a candy thermometer.<br />
With the whisk attachment on the mixter, carefully pour the hot mixture into the gelatin/water mixture on high speed for 15 minutes. The mixture will be light and fluffy and very stiff. After 15 minutes, add the 2tsp vanilla until completely incorporated.</span></span><br />

I love potatoes and we eat red potatoes about twice a week. I can handle it and it seems that my boys handle it well, too. Only time will tell for them as they're little ones but when they get older, they can decide to continue eating potatoes or eliminate them from their diet.<br />
<br />
So, for any of you red-potato-eating-folks, here's a double whammy recipe for you:<br />

Preheat oven to 400degrees.<br />
Wash and cut red potatoes into quarters and place on a baking sheet. Coat generously with oil of choice and sprinkle with salt and pepper. Bake approximately (according to the size of the cut pieces) 25-35 minutes flipping the potatoes once half-way through the baking process.<br />

Sift together dry ingredients into a large bowl. Combine wet ingredients in another bowl and add to the dry ingredients. Mix well. Pour into a greased loaf pan for bread, muffin pan for muffins or any size pan you’d like to use. Sprinkle with dark chocolate chips.<br />
Bake at 350degrees for 40-50 minutes for a loaf pan. Bake for 20-25 minutes for muffins. In a bowl, mix all of the spices together with the ground meat and place on baking sheet into desired shape. Bake at 400 degrees for 10 minutes. Drain as much grease as you can. Next, add your toppings.. What I did was add the crushed tomatoes, onions and sauteed spinach*.<br />
*Heat 1/4cup water in a pan on the stove, add 2-3 large handfuls of spinach and wilt, approximately 2-3 minutes.*<br />
Bake additional 10 minutes or until cooked through.<br />
If you consume cheese, add the tomato sauce of choice and add cheese. If you'd like, you can bake for 10 minutes then broil on low for a few minutes until lightly browned.</div><br />

Remove dough from the bowl, place onto a lightly floured surface and knead until smooth. Spray a large bowl with nonstick spray. Put dough into the bowl and cover with plastic wrap or a towel. Preheat oil in a deep-fryer to 350degrees.<br />
Add the confectioners' sugar to a paper bag and set aside.<br />
Roll the dough out to about 1/4-inch thickness and cut into 1-inch squares. Deep-fry, flipping constantly, until they become a golden color. After beignets are fried, drain them for a few seconds on paper towels, and then toss them into the bag of confectioners' sugar. Hold bag closed and shake to coat evenly. <br />

<div style="text-align: left;">Place the chopped watermelon and lime juice in a blender or food processor and blend until smooth. I do not recommend a juicer because it doesn't provide the pulp/fiber/nutrients that you should consume so please use a blender or food processor.<br />

<div style="text-align: left;">I like to use fresh lime juice when I have it because it kicks the flavor up a notch but if you don't have it, don't worry about it. I don't know about you, but I'm guilty of going to the coffee shop and spending $2.00 on iced coffee. I could kick myself for not knowing how simple it is to make my own at home. I save tons of money doing it this way and it's always available to me, as long as I prepare the night before. A $7.00 bag of coffee grounds at the store will produce about 4 gallons of coffee. Not too shabby!</div><div style="text-align: left;"></div><div style="text-align: left;">So, are you ready for these simple instructions? These are the recipes I love doing because I don't spend a ton of time doing anything!!!<br />

Fill a 1 gallon jug with water and pour in 1 cup of coffee grounds. Stir. Cover with plastic wrap and let sit overnight, or at least 8 hours. The next morning, or after 8 hours, simply strain the coffee grounds (and save for your compost heap) and pour into another gallon container. If you're strainer isn't fine enough, place a paper towel into the strainer and strain once more. This will catch all the fine grounds that passed through the first time.<br />
This will last several weeks in the refrigerator. The "ingredients" can be tweaked to your liking so if you like a strong cup of joe, add 1.5cups coffee to your 1 gallon of water or if you like a weak version, add 3/4cup coffee grounds to 1 gallon of water. Make it yours!<br />
You can also spruce it up by adding some honey, caramel sauce, or chocolate sauce when you serve a glass of it.</div><div style="text-align: left;">Serve with a ton of ice and heavy cream (or not) and enjoy!<br />
