Paleo Chili

Paleo Chili

Do you like beans in your chili? If you're like my husband, you don't. It's plain and simple; beanless chili means the entire pot gone in 2 days. Chili with beans lasts a lifetime around here. AHH! In order to make my husband's tummy satisfied for quick lunches during the week, he asks me to make this chili recipe along with my paleo chicken "noodle" soup.
My prep time is like 2.2 seconds and the cook time is about 1 hour from start to finish. Your standing-around time may be 8-10 minutes. Not too bad for a quick, one-pot meal, huh?
Adapted recipe from The Clothes Make the Girl.
Ingredients:
2Tbsp cooking oil (I chose coconut oil or olive oil)
2lbs. ground beef (or ground meat of choice)
2Tbsp chili powder
2Tbsp cumin
1tsp oregano
1tsp allspice
1tsp salt
1 large white onion diced
4oz. tomato paste
28oz. crushed tomatoes
1cup water or enough liquid to cover the meat/sauce


Directions:
In a large pot, add hamburger meat and onions and cook through. Once thoroughly cooked, add the spice mixture and stir until combined. Add remaining ingredients and simmer 1-2 hours. I usually simmer 1 hour and it tastes great. (I can't wait too long when good food is cooking.)
Do not drain the liquid that's produced when the meal/onions cook. It's keeps the healthy fat in the dish and adds great flavor. Promise!
Spice Mixture
Give this recipe a try.. I promise, if you like beans, you won't miss them here and if you hate beans .. your tummy will thank you!

I have a hard time finding simple (not too much time in the kitchen) recipes that my whole family (paleo me, omnivore husband, one picky,definitely non-paleo teenage son and one sort-of-interested-in-health-and-paleo teenage son. It's hard to find something that everyone is happy or at least willing to eat, but this is the first time in a while we've had raves all around!

      I made this one day and my girlfriend came over and I offered her a bowl. She went home and made it for her husband and kids and it was a huge hit.

      I make this chili once or twice a week and usually eat it for lunch since it's quick and easy then I actually cook dinner for the week.

      I'm all about quick and flavorful meals and this one is great.

    1. Hi Heather,

      Nope. Not too spicey at all. I use chili powder on a lot of recipes that I feed my kids and they like it and don't complain. I think the idea that chili powder is spicey is because most of the chili we eat is super spicey, probably from the peppers added in.
      To me, chili powder is most salty than anything so be careful with the amount of salt you add at first. You can always add more salt but you can't take it out!

  4. Thanks for this easy recipe... I'm making it as we speak! I love cumin but it never would have occurred to me to add it to chili. It still needs to simmer for a couple of hours, but the first initial taste after adding all the ingredients proved to be very yummy! Any idea how many servings (assuming maybe 1 cup for each serving) this makes? I can always measure it out, but was just curious. Thanks!

    1. I honestly don't know how much this one recipe makes but I would assume about 6-8cups depending on how much liquid you add to it.
      I usually cook 2-4lbs. of beef and make chili from 2lbs. of it and use the remaining beef for taco meat.

    1. I know a lot of people don't like the taste of cumin. You could leave that out next time and replace that with more chili seasoning and allspice. I leave out the allspice (it's not good to my tummy somehow) and I don't miss it at all.

    1. Allspice can be found in the spice section at your grocery store and is a blend of cinnamon, nutmeg and cloves. Its used in sweet and savory dishes.

    1. Yes, I did. You can use fresh ones if that's what you have. Just pulse in the food processor or squish them in your hands :)

      28oz. is 3.5 cups in case you needed that info. You can use any type of tomato that you like. I just hate chunky style.

  10. We just had this tonight for dinner and it was a hit...even with my kids. I made the paleo cheddar bay biscuits to go with it. I do believe I have found my new winter food. The only thing I did different was add a can of chili seasoned diced tomatoes and for the water I used half water half broth. I'm hooked!

    I've made it twice so far - once for Football Sunday and once for an office potluck lunch.

    P.S. This recipe is ideal for potlucks. I placed my finished chili in a slow cooker on low and it kept for all afternoon.

    1. Salsa would give it a different taste and might be pretty yummy. It's going to lack some tomato flavor so add a tbsp or two of tomato paste.

      Try using tomato sauce. The soup would have too many 'extras' in ingredients and the tomato paste is way too concentrated.

      I do make "taco" beef with chili powder, paprika, cumin, oregano and a little salt. I also add onion and green bell pepper.

  19. Great recipe Angela, thanks for sharing. My wife and son recently started on the Paleo diet and it is very difficult to find a variety throughout the week. The chili is delicious, I was quite surprised. The nice thing about this recipe is that one can use this as the base for whatever creative additions they think up. I substituted salt with garlic salt, added a bit of onion powder, diced some garlic, and added chopped celery to chunk it up. Thanks again:)

My dad is a chili master and cannot CANNOT wait to have him taste it :) I made some brown rice to put underneath since there is no beans and only used a half of white onion because I don’t like onion all that much, also used one clove of garlic!!
