Baked Bacon

Baked Bacon



When I don't have time to clean up a big greasy bacon mess from the stove, I always turn on my oven and wait about 20 minutes until the most perfect piece of bacon is ready. If you have a baking sheet and an oven-safe cooling rack, you're in luck because that's all the kitchen equipment you'll need today. It is very simple; saves a lot of waiting time over the stove and saves clean up time. Do this and you'll never dread "cooking" bacon again!

Ingredients:
Bacon

Directions:
Preheat oven to 400 degrees.
Line a baking sheet with tin foil (to throw away the mess) and place the oven-safe cooling rack on top. Line your bacon up on the rack, as many pieces as you'd like and bake until cooked to your liking. I bake mine about 20 minutes but you do what works for you.
Remove from oven and eat!

Paleo Brownies

Paleo Brownies

If dark-chocolate is what you're after, this is the recipe for you. I love that this is a flourless recipe made without any processed sugar. It's made in one pot, not bowl, and is divine! This is yet another home-run recipe that everyone loves. Give this recipe a try!



Ingredients:
1cup pure maple syrup
3/4cup natural cocoa powder
1cup almond butter
2tsp vanilla extract
1/2tsp baking powder
1/2tsp salt
1 egg
1/4cup dark chocolate chips

Directions:
Heat syrup on low heat on the stove. Stir in cocoa powder over low heat until smooth. Cocoa can burn fast so keep your eye on it.


Remove from heat and stir in remaining ingredients until thoroughly mixed.
Pour into an 8x8 baking pan greased with olive oil or coconut oil. Bake at 325F for 40-50 minutes.


Use a toothpick to make sure it's cooked through. Cool before cutting/serving.

Paleo Meatballs

Paleo Meatballs
I am not a fan of heavy foods that make me look 5 months pregnant by the time I'm finished with my meal and that's why I make my meatballs without breadcrumbs! A. it's "whole30 approved" (go here to learn about the whole foods way of life) and B. it's one less step that I have to take when preparing a meal.


These meatballs can cooked the same day or they can be assembled and flash frozen ahead of time then baked off for later. Most of my meals can be frozen before its cooked/baked and that can help save a lot of time in the future. You can easily prepare 2lbs. of beef, bake one tonight and freeze the other portion for another night saving you 10 minutes of prep time. Easy!

P.s. Try the meatballs with my spaghetti squash!
Ingredients:
1lb. grass fed ground beef
1 egg
1tsp garlic powder
1tsp paprika
salt and pepper to taste (about 1/2tsp salt and 1/4tsp pepper)
1/2 small onion, minced (I used 1Tbsp dried minced onion in this photo)
1Tbsp spinach (optional)
1Tbsp fresh parsley (optional)


Directions:
Preheat oven to 375degrees.
In a large bowl, scramble egg and combine remaining ingredients. Mix thoroughly.


Take an ice-cream scoop and measure out equal portions onto a baking sheet lined with parchment paper or tin foil.



Bake for 10 minutes and then flip the meatballs to the other side and bake another 10 minutes. Total cook time is 20 minutes.


Remove from baking sheet and eat!!



These were browned by the oven only. If you want a little crunch to it and have the time for an extra step/mess, heat a pan with about 1Tbsp olive oil and brown on both sides then bake 10-15 minutes until thoroughly cooked.
