Perfect Red Potatoes, Two Ways

There are a lot of people who don't eat white potatoes because it may be a problem for them with the starch and glucose and what-not. There's a long post about potatoes here that you can read if you'd like. It's from Mark's Daily Apple and I happen to like some of the stuff he's written. Although he's primal, it seems that he agrees that a large part of our population can not internally handle tubers (potatoes).

I love potatoes and we eat red potatoes about twice a week. I can handle it and it seems that my boys handle it well, too. Only time will tell for them as they're little ones but when they get older, they can decide to continue eating potatoes or eliminate them from their diet.

So, for any of you red-potato-eating-folks, here's a double whammy recipe for you:
1) Baked red potatoes
and
2) Skillet fried red potatoes
 
Paleo Baked Red Potatoes:
Printable Recipe

One small bag of red potatoes washed and cut into quarters
Salt and pepper to taste, approximately 1tsp salt and 1/2tsp pepper
2Tbsp olive oil, or oil of choice
1Tbsp fresh rosemary, minced
1Tbsp fresh parsley, minced
 
Directions:
Preheat oven to 400degrees.
Wash and cut red potatoes into quarters and place on a baking sheet. Coat generously with oil of choice and sprinkle with salt and pepper. Bake approximately (according to the size of the cut pieces) 25-35 minutes flipping the potatoes once half-way through the baking process.
When finished, sprinkle with rosemary and parsley and eat these delicious potatoes.
 
Paleo Pan-Fried Red Potatoes

Use remaining ingredients from the above recipe, which are the cooked red potatoes. In a cast iron skillet, heat 2Tbsp olive oil (or bacon fat, or any fat of choice) until the pan starts steaming. When it's hot, place the potatoes in the skillet and cook 15-20 minutes until browned on all sides. Stir and flip potatoes every minute or so. Keep your eye on this as it could burn easily.


Sprinkle with fresh herbs such as rosemary, thyme or parsley. Eat with whatever condiment of choice you'd like (we prefer ketchup!) or sprinkle with cheese and melt then add some chili or sour cream. Yummy in my tummy!


The first recipe is great for a lunch or dinner while the second recipe is great for breakfast, lunch or dinner. Please enjoy and let me know how you like these two recipes.

Anyone else ready for the fall to roll around? This summer in Florida has been very hot, humid and extremely rainy. So much for being called the Sunshine State. I'm always ready for spring and fall and enjoy watching summer and winter go away.

Who's in the mood for pumpkin? Who's ready for sweater and scarf season? I know I am! My girlfriend requested an order of pumpkin bread so I made her mini loaves and put dark chocolate chips in them. So delicious!

I also made a paleo version of it ... then I made breakfast cookies with the pumpkin. MMM! Be on the lookout for those recipes.






Ingredients:
Makes 1 loaf or 10-12 muffins
1 1/2cups organic all purpose flour
1cup organic pumpkin purée
1/4cup olive oil
2 eggs
1/2tsp salt
1/2cup sugar
1tsp baking soda
1/2cup water
1tsp pumpkin pie spice
1/4cup (or more) dark chocolate chips



 
Directions:
Preheat oven to 350 degrees.
Sift together dry ingredients into a large bowl. Combine wet ingredients in another bowl and add to the dry ingredients. Mix well. Pour into a greased loaf pan for bread, muffin pan for muffins or any size pan you’d like to use. Sprinkle with dark chocolate chips.
Bake at 350degrees for 40-50 minutes for a loaf pan. Bake for 20-25 minutes for muffins. Bake 20-30 minutes in any 8x8 or 9x9 or 9x13 pan.

My husband and kids are in love with pancakes whether it has chocolate chips inside or some sort of liquid topping such as maple syrup of a fruit sauce. My husband loves fresh blueberry sauce on his pancakes and asked me to make him some the other day and his tummy is very happy that I did.


This recipe comes together in 5 minutes or less so while you're making your pancakes, get this recipe started on the stove. You'll be happy you tried it!

Ingredients:
Makes 3 cups
2cups fresh or frozen blueberries (any fruit will work)
1/2cup water
1/2cup sugar, I used organic cane but you can use maple syrup or white sugar instead
2Tbsp lemon juice
2Tbsp arrowroot powder (or corn starch) mixed with 2Tbsp cold water



Directions:
Over medium heat, add the blueberries, water, sugar and lemon juice to a pot and bring to a simmer. Once small bubbles form, stir in the arrowroot powder mixture and stir until thickened, approximately 1 minute.


Serve over your favorite pancakes or french toast and enjoy a tasty treat!

My mother recently gave me two of her eggplants she was growing in her garden and I was really excited to try it. I am not the eggplant type but I told myself that I was going to make something good from this free gift! And guess what? It took 5 minutes to prepare, 20 minutes to bake and 1.5 meals to devour. I have no clue what goes into a typical vegetarian lasagna so if this isn't what you're expecting, you'll need to find another recipe. If this is something you think you'd like, give it a try. Truly easy to make and very delicious!

*Note: If you are paleo, omit the cheese in this recipe. If you are primal and can tolerate cheese, add as much as you'd like. The quantity can be adjusted to what you'd like to make. I made a small pan of it so double for an 8x8 pan or triple the recipe for a 9x13.


Ingredients:
1cup sliced eggplant
1cup squash or zucchini
1/3cup shredded cheese
1/2-2/3cup spaghetti sauce
salt and pepper to taste

Directions:
Preheat oven to 375degrees.
Grease a baking dish with butter or oil and place 1/2 of the spaghetti sauce on the bottom and spread to cover. Next, place one layer of eggplant and then one layer of squash and then 1/2 of the shredded cheese.

Repeat with spaghetti sauce, veggies, and cheese. In between each layer, add salt and pepper to taste.

Bake for 15-20 minutes until bubbly and veggies have softened. Broil on low for 5 minutes if you'd like the cheese to brown up. Be careful not to burn the top layer.


Serve when cool enough.

Who says eating healthy has to be tasteless and boring? Not me!! All of this tasted amazing!

There are days that I just love baking. I'll bake three or four things if I'm not busy with running the kids around or doing chores and the easiest thing is to throw everything into one bowl, mix and pour into a baking dish and set the timer and walk away. This is one of those easy receips!

Check out another easy paleo, flourless "bread" recipe found here. For those of you allergic to gluten, this is a great recipe as it provides lots of healthy fat and vegetables! My kids eat this and prefer it to unhealthy desserts. Try this out; you won't be disappointed!
Ingredients:
1 1/2cup almond butter
2 eggs
1 1/2cups mashed sweet potatoes
2Tbsp maple syrup or honey
1/4cup unsweetened applesauce (Check out my applesauce recipe and it has cinnamon in it already!)
1 1/2tsp baking soda
1/4tsp cinnamon
1/4cup dark chocolate chips

Directions:Preheat oven to 325 degrees.
Mix all ingredients together (besides the pecans) in a food processor or beat on high with a mixer until smooth. Grease a 13x9 pan with coconut oil or olive oil and pour the mixture into the pan. Top with pecans and bake 40-45 minutes or until a toothpick comes out clean. Cool and serve.
Tip: If you have leftovers, cut into portion sizes, line a sheet pan with parchment paper and freeze for 1 hour then move to a freezer bag.

This may very well be the simplest post I've ever done because the 'recipe' is the simplest I've ever done. I'm a baked-corn kind of girl. I'm not a fan of boiled corn since I think it looses all of its flavor in the water. Here's how to get the tastiest corn by baking it!
Shuck the corn and make sure the hairs are off of it. Get some tin foil and tear it into sheets that will hold one ear of corn each, making sure you have enough to cover it completely. Place about 1tsp butter on the tin foil, lay the corn on top and sprinkle with a generous amount of salt and pepper and wrap tightly. Place seam side up on a baking sheet and bake at 400degrees for 20 minutes. Remove from oven and remove the tin foil. Cool slightly and enjoy!

You can also grill it this way and use any type of topping you'd like: Chili powder, Garlic Powder, Cumin.. whatever you have on hand!

I love pickled banana peppers but have never tried fresh ones right out of the garden. My mom's friend was growing these "just to grow them" so she gave some for me to have. Just a note here, the smaller peppers are more spicy than the larger ones. They don't compare to a jalapeno spice or cayenne but they can surprise you!

Well, mom went online and found a recipe and let me try it and I was hooked. Bacon is awesome and if it's crispy and wrapped around something, it makes it even more delicious. You can create any type of stuffed pepper if you want to. Use chicken inside, scrambled eggs, crumbled sausage or make it however you'd like. The possibilities on this are endless.
Don't hate on the scraps for my compost bin!
Ingredients:
Depending on serving sizes, 1-2 as a side, 3-4 as an entree:
Banana peppers
Bacon slices
Chopped Onion
Chopped Bell Peppers
Chopped Tomatoes
Shredded Cheese

Directions:Preheat oven to 400 degrees.
Cut tops off banana peppers and butterfly from bottom tip to cut top (See pictures for reference). Remove seeds and ribs and stuff with the above ingredients. Wrap bacon around the peppers and secure it with a toothpick.

Bake at 400degrees for 8 minutes then broil on low for 5-10 minutes, depending on how crispy you like your bacon. The peppers will soften, the cheese will have melted and the bacon will be crispy. Remove from oven and eat!
Sooooo good!

Paleo Kale Chips

When you're trying to sort out processed foods, there are just some things that you miss and one of them is a crunchy chip. When done right, you can have a super healthy snack that you'll want to share with your friends. It's very simple but aren't all of my posts?


Ingredients:
2-3 bunches of kale, washed and ribs taken out
1/2tsp salt
1Tbsp coconut oil
1Tbsp apple cider vinegar or white vinegar

Directions:
Preheat oven to 300degrees.
In a large bowl, add the kale and coat with half of the coconut oil then add the remaining oil and vinegar. Spread evenly onto a baking sheet and sprinkle with salt and bake approximately 20-25 minutes. The kale should be crunchy to the touch and not soggy. If there are some soft and some crunchy, remove the crunchy ones and continue to bake the soft ones.
Note: The oven will probably smoke when you open the door, but don't be alarmed as long as the kale isn't burning, it's fine.

I've been on a quest of healthy, flourless recipes and this is such a great recipe to share. I don't remember the exact link to the original recipe, but it's somewhere on this website.

Want to know the best part about this recipe? It only needs 2Tbsp of maple syrup!! This is a great low-sugar recipe and I just love the fact there's no flour in it. How come we grew up needing flour in all of our recipes?

Anyway, I'll step off my soap box and give you the glorious-ness now!

Ingredients:
1 1/2cup almond butter
2 eggs

2 ripe bananas, smashed with a fork (sub 2/3cup pumpkin)
2Tbsp maple syrup
1/4cup unsweetened applesauce
1 1/2tsp baking soda
1/4tsp cinnamon
1/4cup chopped pecans
Directions: Preheat oven to 325 degrees.
Mix all ingredients together (besides the pecans) until combined. Grease a 13x9 pan with coconut oil or olive oil and pour the mixture into the pan.



Top with pecans and bake 40-45 minutes or until a toothpick comes out clean. It will deflate a little after you bring it out of the oven so don’t worry, you didn’t do anything wrong!


Cool and serve.

Tip: To make it more appealing to kids, add 1/8 cup mini chocolate chips or chopped dark chocolate chips and add to the mixture before baking. Don’t forget, if you have leftovers to cut into portion sizes, line a sheet pan with parchment paper and freeze for 1 hour then move to a freezer bag
